
These potatoes are popular in the Middle East, but the ingredients are fairly simple!
2-3 lbs potatoes
2 Tablespoons Oil (Olive, Grapeseed, Avocado)
2 teaspoons Uncle Bubby’s Yardbird Rub
2 Cloves Garlic, Minced
2 teaspoons Aleppo Pepper, or Crushed Red Pepper
Cilantro to taste
Lemon to taste
Salt and Pepper
Preheat grill to 425 degrees. Cut potatoes into 1” cubes and rinse with cold water. Pat dry and add to medium bowl. Add 1 Tablespoon oil and toss to coat. Season with salt and pepper. Place in a medium aluminum pan that has been sprayed with cooking spray and place on the grill, not over direct heat. Cook for about 30 minutes, stirring often to prevent burning. In a separate bowl, combine remaining oil, Yardbird Rub, garlic, Aleppo, and cilantro. Once potatoes are crispy and fork tender, remove from grill and pour the mixture over the top. Add a squeeze of lemon over the top. Serve warm or at room temperature. Enjoy!
